Spiced Pumpkin Bread Pudding

Ingredients
- 1 15 ounce can pumpkin
- 3/4 cup sugar
- 2 teaspoons pumpkin pie spice
- 3 eggs
- 1 cup milk
- 1/4 cup whipping cream, half-and-half or light cream
- 1 tablespoon brandy (optional)
- 1 teaspoon vanilla
- 5 cups dry French bread cubes
- Whipped cream
- Ground cinnamon
Directions
1. In a large mixing bowl, combine pumpkin, sugar, and pumpkin pie spice. Add eggs. Beat lightly with a rotary beater or fork till just combined. Gradually stir in milk, whipping cream, brandy, if you like, and vanilla; mix well. Stir in bread cubes till coated with pumpkin mixture. Pour mixture into an ungreased 2-quart square baking dish.
2. Bake, uncovered, in a 325 degree F. oven for 45 minutes. Cool slightly.
3. To serve, spoon warm bread pudding into individual serving dishes. Top each with whipped cream. Lightly sprinkle with cinnamon. Makes 8 servings.
