One-Pot Winter Dinner
Cook: 7 hrs
Ingredients
- 2 31 ounce can pork and beans in tomato sauce
- 1 15 1/2 ounce can butter beans, drained*
- 1 15 ounce can dark red kidney beans, drained*
- 1 cup catsup
- 1/4 cup packed brown sugar
- 3 tablespoons vinegar
- 1 teaspoon liquid smoke
- Dash salt*
- 1/2 pound ground raw chicken
- 5 slices bacon,* cut up, or 2 tablespoons cooking oil
- 1 cup chopped onion
- Dash pepper
Directions
1. In skillet, cook chicken, bacon, or cooking oil and onion until chicken is no longer pink. Drain off fat. Transfer mixture to a 3-1/2- or 4-quart electric crockery cooker. Gently stir in remaining ingredients.
2. Cover and cook on low heat setting for 7 to 8 hours. (Or, cook on high heat setting for 3-1/2 to 4 hours.) Makes 6 to 8 servings.

*Nutrition Note:
To reduce sodium, rinse and drain beans before adding them to the crockery cooker, omit salt and use half the bacon.
