Ingredients

  • 3 stalks celery, chopped (1-1/2 cups)
  • 1 medium green pepper, chopped
  • 1 small onion, chopped (1/3 cup)
  • 2 cloves garlic, minced
  • 2 teaspoons canola oil or cooking oil
  • 8 ounces cooked or raw turkey, chopped
  • 1 28 ounce can crushed Italian plum tomatoes in puree
  • 1 15 ounce can kidney beans, rinsed and drained
  • 1 15 ounce can chick peas (garbanzo beans), rinsed and drained
  • 1 cup dry white or red wine
  • 2 to 4 teaspoons chili powder
  • 1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme, crushed
  • 1 teaspoon salt-free seasoning
  • tablespoon snipped fresh oregano or 1 teaspoon dried oregano, crushed

Directions

1. In saucepan, cook celery, green pepper, onion, and garlic in oil for 3 minutes. Add turkey. Cook and stir for 3 minutes.

2. Add the remaining ingredients. Bring to boiling. Reduce heat. Cover and simmer for 20 minutes, stirring the mixture occasionally. Makes 6 servings.
