Ingredients

  • 2 12 - 16 ounces pork tenderloins
  • 3 tablespoons dried oregano, crushed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup olive oil
  • 1/2 cup lemon juice
  • 1/2 cup soy sauce

Directions

1. Trim fat from meat. In a small bowl, combine oregano, salt, and black pepper. Sprinkle mixture evenly over both sides of meat; rub in with your fingers. Place meat in a plastic bag set in a shallow dish.

For marinade:

2. In a small bowl, combine olive oil, lemon juice, and soy sauce. Pour over meat; seal bag. Marinate in the refrigerator for 2 hours, turning bag occasionally. Drain meat; discarding marinade.

3. For a charcoal grill, arrange hot coals around a drip pan. Test for medium-hot heat above pan. Place meat on grill rack over drip pan. Cover and grill for 30 to 35 minutes or until an instant-read thermometer inserted in the meat registers 155 degree F. (For a gas grill, preheat grill. Reduce heat to medium-high. Adjust for indirect cooking. Place the meat on a rack in a roasting pan, place on grill rack and grill as above.)

4. Let stand 10 minutes before slicing. Makes 10 servings.
