Lemony-Soy Herbed Pork Tenderloins

The pork is seasoned with oregano then marinated in lemon juice and soy sauce to make this low-calorie grilled meal.

- Trim fat from meat. In a small bowl, combine oregano, salt, and black pepper. Sprinkle mixture evenly over both sides of meat; rub in with your fingers. Place meat in a plastic bag set in a shallow dish.
- For marinade: In a small bowl, combine olive oil, lemon juice, and soy sauce. Pour over meat; seal bag. Marinate in the refrigerator for 2 hours, turning bag occasionally. Drain meat; discarding marinade.
- For a charcoal grill, arrange hot coals around a drip pan. Test for medium-hot heat above pan. Place meat on grill rack over drip pan. Cover and grill for 30 to 35 minutes or until an instant-read thermometer inserted in the meat registers 155 degree F. (For a gas grill, preheat grill. Reduce heat to medium-high. Adjust for indirect cooking. Place the meat on a rack in a roasting pan, place on grill rack and grill as above.)
- Let stand 10 minutes before slicing. Makes 10 servings.
