Directions
- In a large skillet, cook sausage, onion, and celery until meat is no longer pink. Dont drain; set aside.
- In a very large mixing bowl, combine eggs, poultry seasoning, salt, sage and pepper. Add corn bread and bread cubes; toss until coated. Add sausage mixture, apples, pecans, and apricots. Add broth, tossing lightly to moisten.
- Place stuffing in a lightly greased 3-quart casserole. Cover; bake in a 375 degree F oven 40 minutes. Uncover and bake for 5 to 10 minutes more or until golden and a meat thermometer registers 165 degree F.
