Roasted Garlic and Tomato Pizza

garlic (about 42 cloves)
Italian bread shell (Boboli brand) or prepared pizza crust
small tomatoes, sliced
pitted black olives
mild goat cheese, crumbled, or shredded mozzarella cheese
Snipped fresh basil or other herbs
- Peel garlic. In saucepan, cook and stir garlic in olive oil over medium heat for 10 to 15 minutes or until garlic is golden. Remove from pan with slotted spoon, reserving oil. Cool garlic.
- Place bread shell or prepared pizza crust on a baking sheet. Brush with some of the garlic-flavored olive oil. Arrange sliced tomatoes, olives, and cheese on top of crust.
- Arrange garlic cloves on bread shell. Drizzle a little olive oil over all.
- Bake in a 450 degree F oven about 10 minutes or until cheese begins to brown. Sprinkle with basil. Makes 6 to 8 servings.
