Ingredients

  • 1 8 - ounce package cream cheese
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 1 egg
  • 1 9-inch unbaked pie shell
  • 1 1/4 cups chopped pecans
  • 2 egg yolks, slightly beaten
  • 2/3 cup light corn syrup
  • 1/4 cup sugar
  • 1 teaspoon vanilla

Directions

  1. In a medium mixing bowl, combine cream cheese, 1/3 cup sugar, 1 teaspoon vanilla and the salt. Beat with an electric mixer till mixture is smooth. Add the 1 egg and beat on low speed till mixture is combined.
  2. Spread mixture over bottom of the unbaked pie shell. Sprinkle pecans evenly over cream-cheese mixture.
  3. In a large mixing bowl, combine 2 eggs, corn syrup, 1/4 cup sugar and 1 teaspoon vanilla. Carefully pour over pecans in pie shell.
  4. Bake in a 375 degree oven for 40 to 45 minutes or till puffed and center appears nearly set when you shake it.
  5. Cool completely on a wire rack. Store in refrigerator. Makes 8 servings.
