Ingredients

  • 4 medium ripe pears, peeled, cored and chopped
  • 3 medium cooking apples, peeled, cored and chopped
  • 2 cups cranberries
  • 1 cup sugar
  • 3 tablespoons all-purpose flour
  • 2 teaspoons finely shredded orange peel
  • 1 teaspoon lemon juice
  • 1/8 teaspoon salt
  • 3/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 cup butter, cut up
  • 1/3 cup milk, half-and-half or light cream
  • 1 egg, lightly beaten
  • Vanilla ice cream or whipped cream (optional)

Directions

  1. In a large bowl combine pears, apples, cranberries, 1 cup sugar, 3 tablespoons flour, orange peel, lemon juice and salt. Toss lightly until just combined. Spoon into a 2-quart casserole dish. Bake, uncovered, in a 375 degrees F oven for 25 minutes.
  2. Meanwhile, in a medium bowl combine 3/4 cup flour, cornmeal, 2 tablespoons sugar, and baking powder. Using a pastry blender, cut butter into flour mixture until butter is pea-size. Combine milk and egg. Add to flour mixture all at once, stirring until just combined. Spoon in 8 or 10 mounds atop fruit mixture.
  3. Bake 25 minutes more or until a toothpick inserted near the center of the topping comes out clean. Cool for 30 minutes. Serve warm with ice cream or whipped cream, if you like.
