You say tomato, we say peach--at least, we do for this fantastic BLT-avocado toast hybrid. Eat it for breakfast, lunch or dinner!


  • 1 medium avocado, halved and pitted
  • 2 slices whole grain bread, toasted
  • Coarse salt
  • 3 slices crisp-cooked bacon, halved
  • 1 medium ripe peach, pitted and sliced
  • Freshly ground black pepper


  1. Using a small spoon, scoop avocado flesh from each half onto a piece of toast; mash with a fork. Sprinkle with salt.
  2. Arrange bacon over avocado on toast. Top with peach slices; sprinkle with pepper.
