Tagliatelle A La Hudson
Ingredients
- 2 teaspoons finely shredded lemon peel
- 2 tablespoons unsalted butter, softened
- 8 ounces fresh or dried tagliatelle or fettuccine
- 1 cup whipping cream, heated
- 1/3 pound prosciutto, cut into strips
- 3/4 cup fresh-grated Parmesan cheese
Directions
1. In a small bowl, combine the lemon peel and softened butter; set aside. Cook the pasta in boiling, salted water just until tender; drain.
2. Transfer the pasta to a warm serving bowl. Add the lemon butter and warm cream. Toss gently to coat. Add the prosciutto. Serve pasta sprinkled with grated Parmesan cheese. Makes 6 servings.
