Tagliatelle A La Hudson

finely shredded lemon peel
unsalted butter, softened
fresh or dried tagliatelle or fettuccine
whipping cream, heated
prosciutto, cut into strips
fresh-grated Parmesan cheese
- In a small bowl, combine the lemon peel and softened butter; set aside. Cook the pasta in boiling, salted water just until tender; drain.
- Transfer the pasta to a warm serving bowl. Add the lemon butter and warm cream. Toss gently to coat. Add the prosciutto. Serve pasta sprinkled with grated Parmesan cheese. Makes 6 servings.
