Roadhouse Mac and Cheese

Ingredients
- 9 ounces dried elbow macaroni (2-1/2 cups)
- 1/2 cup chopped onion
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1/2 cup whipping cream, half-and-half, or light cream
- 1 bay leaf
- 1 tablespoon Dijon-style mustard
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups shredded 2-year Grafton Village cheddar cheese or cheddar cheese (8 oz.)
Directions
1. In a Dutch oven, cook macaroni according to package directions. Drain; return to Dutch oven.
2. Meanwhile, in a medium saucepan cook and stir onion in hot butter over medium heat until tender, about 4 minutes. Stir in flour. Add milk, whipping cream, bay leaf, mustard, salt, and pepper. Cook and stir until thickened and bubbly, about 5 minutes. Remove bay leaf.
3. Add sauce and cheese to pasta in Dutch oven. Cook and stir over medium heat for 8 to 10 minutes, or until hot and bubbly. Makes 4 servings.
