Consider this oven-roasted melange a hands-free stir-fry. It's fantastic over rice or as a side to pork.

Ingredients

  • 6 cups shreddedcabbage (1 lb)
  • 1 cup thinly bias-sliced carrots
  • 1/3 cup slivered almonds
  • 1 tablespoon peeled and finely diced fresh ginger
  • 2 tablespoons vegetable oil
  • 2 red plums or peaches, pitted and cut into 3/4-inch wedges
  • 1 1/2 teaspoons toasted sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon soy sauce
  • 2 green onions, cut into 1-inch pieces

Directions

  1. Preheat oven to 425 degrees . In a 15x10x1-inch baking pan, combine cabbage, carrot, almonds and ginger. Drizzle with vegetable oil; toss to coat. Roast for 10 minutes. Stir in plums. Roast 10 to 15 minutes more, or until cabbage is wilted and starting to brown.
  2. Meanwhile, combine sesame oil, sugar, rice vinegar, soy sauce and green onions. Drizzle over cabbage mixture; toss to coat.
