The avocado in this piquant puree of lime, cilantro, onion and tomatillos gives the salsa some richness and a tad bit of body.

Ingredients

  • 12 ounces fresh tomatillos, husks removed, rinsed and quartered
  • 1/2 cup fresh cilantro
  • 2 green onions, coarsely chopped
  • 1 fresh jalapeno chile pepper, seeded (if desired) and coarsely chopped
  • 1/2 avocado, seeded and peeled
  • 1 clove garlic
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt

Directions

  1. Puree all ingredients in a blender or food processor until smooth. Chill, covered, for at least 30 minutes or up to 24 hours. Stir before serving.
