Smoked Cheddar Muffins

Ingredients
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 to 1/2 teaspoon cayenne pepper
- 2 eggs
- 1 cup milk
- 1/4 cup butter or margarine, melted
- 1 cup shredded smoked cheddar cheese (4 ounces)
- Desired toppings (such as sunflower seeds, poppy seeds, sesame seeds, pine nuts, thin strips of roas
Directions
1. In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper. In another bowl beat together eggs, milk, and melted butter. Add to flour mixture. Add the 1 cup shredded cheese and stir just until batter is smooth (do not overmix).
2. Spoon batter into greased muffin cups, filling cups almost full. Top with desired toppings. Bake in a 425 degree F oven for 12 to 15 minutes or until golden brown. Let cool in pan for 5 minutes. Remove from muffin cups and serve warm. Makes 12.
