These low-fat bran muffins get extra sweetness and moisture from the raisins.

Ingredients

  • 2 cups natural wheat bran (white wheat bran)
  • 2 cups all-purpose flour
  • 3/4 cup raisins
  • 1/4 cup sugar
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 beaten egg
  • 3/4 cup milk
  • 2/3 cup honey
  • 1/2 cup margarine, melted

Directions

  1. In a large bowl, stir together wheat bran, flour, raisins, sugar, baking soda, and salt. In a small bowl, combine egg, milk, honey, and melted margarine. Add all at once to flour mixture. Stir just until moistened; don't beat.
  2. Grease muffin cups or line with paper bake cups; fill 2/3 full. Bake in a 400 degree F oven for 16 to 18 minutes or until golden. Remove from pans. Serve warm. Makes about 16 muffins.
