Sweet Potato-Pork Skillet

pork loin rib chops, cut 3/4 inch thick

sweet potatoes, peeled and cut into 1-inch cubes (3 cups)

onion, sliced and separated into rings

orange juice

cooking apple, cored and chopped

maple-flavored syrup or honey

Directions
- Coat a large oven-going skillet with cooking spray. Trim fat from chops. In a skillet, brown chops on both sides over medium heat. Remove chops from skillet.
- Add sweet potatoes, onion, and orange juice to skillet. Bring the mixture to boiling.
- Stir in apple, syrup, raisins, and cinnamon. Top with chops; sprinkle with salt and pepper. Cover and bake in a 350 degree F oven about 35 minutes or until pork chop juices run clear. Makes 4 servings.
