The math on these homey bars couldnt be simpler: one pan, one ripe banana and less than one hour from start to finish.

Ingredients

  • 1 cup butter
  • 2/3 cup packed brown sugar
  • 2/3 cup pure maple syrup
  • 2 eggs
  • 1 large ripe banana, mashed (about 1/2 cup)
  • 1 teaspoon vanilla
  • 1/2 teaspoon maple flavoring (optional)
  • 1 1/2 cups all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup chopped walnuts, toasted
  • 3/4 cup dried cranberries

Directions

  1. In a large saucepan, combine butter and brown sugar over medium heat, stirring until butter melts and mixture is smooth, stirring frequently. Remove from heat; cool slightly.
  2. Stir in syrup. Stir in eggs, one at a time. Stir in banana, vanilla and, if desired, maple flavoring. Stir in flours, baking powder, salt and cinnamon. Stir in half the walnuts and all the cranberries.
  3. Spread batter in a greased 13x9x9-inch baking pan. Sprinkle with remaining walnuts. Bake at 350 degrees for 20 to 25 minutes or until a wooden toothpick inserted near center comes out clean. Cool completely in pan on a wire rack. Cut into bars.
