Lemon and grapes brighten the fresh green bean, broccoli and mushroom mixture.

Ingredients

  • 8 ounces trimmed fresh green beans
  • 2 cups bite-size broccoli florets
  • 6 medium mushrooms, quartered
  • 1 cup red seedless grapes
  • 2 cloves garlic, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • Finely shredded lemon zest (set aside) (optional)
  • 1 teaspoon lemon juice
  • Fresh thyme leaves (optional)

Directions

  1. In a 15x10x1-inch baking pan, toss together green beans, broccoli, mushrooms, grapes, garlic, olive oil, salt and pepper. Spread in an even layer. Roast in a 425 degrees F oven for 20 to 25 minutes or until tender and lightly browned, stirring halfway through. To serve, stir in lemon juice, lemon zest and, if you like, fresh thyme.
