Avocado adds luscious richness to this bright, citrusy chicken salad. Be sure to toss the ingredients gently so the avocado doesn't blend in completely.


  • 2 cups purchased deli-roasted chicken, chopped
  • 1/2 cup chopped celery
  • 1/2 cup mayonnaise
  • 1/4 cup thinly sliced green onion tops
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped avocado
  • 1/4 cup finely shredded Parmesan cheese
  • 2 teaspoons lemon zest
  • 2 cloves garlic, minced


  1. In a small bowl, stir together chicken, celery, mayonnaise, green onion tops, parsley, lemon juice and black pepper. Add avocado, Parmesan cheese, lemon zest and garlic. Toss gently to combine.
