Avocado adds luscious richness to this bright, citrusy chicken salad. Be sure to toss the ingredients gently so the avocado doesn't blend in completely.


  • 2 cups chopped deli-roasted chicken
  • 1/2 cup chopped celery
  • 1/2 cup mayonnaise
  • 1/4 cup thinly sliced green onion tops
  • 1/4 cup chopped fresh parsley
  • 1/4 cup finely shredded Parmesan cheese
  • 2 tablespoons lemon juice (reserve zest)
  • 2 teaspoons lemon zest
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped avocado


  1. In a small bowl, stir together chicken, celery, mayonnaise, green onion, parsley, lemon juice and black pepper. Add Parmesan cheese, lemon zest and garlic. Toss gently to combine. Add avocado before serving. Gently toss to combine.
