Ingredients

  • 1 cup quick-cooking rolled oats
  • 1/2 cup cooked wild rice
  • 1/2 cup butter, cut up and softened
  • 1 1/2 cups boiling water
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate pieces or milk chocolate pieces
  • 2 tablespoons powdered sugar (optional)
  • 2 teaspoons unsweetened cocoa powder (optional)

Directions

  1. In a large bowl, combine oats, rice, and butter. Pour the boiling water over the oat mixture; let stand for 10 minutes. Grease and flour a 13x9x2-inch baking pan; set aside.
  2. Add granulated sugar and brown sugar to the oat mixture; stir until butter is melted. Stir in eggs until combined. Add flour, 2 tablespoons cocoa powder, baking soda, and salt; stir until combined. Stir in 1/2 cup of the chocolate pieces. Pour batter into the prepared pan. Sprinkle with the remaining 1/2 cup chocolate pieces.
  3. Bake in a 350 degrees oven 35 to 40 minutes or until a wooden toothpick inserted near the center of cake comes out clean. Cool completely in pan on a wire rack. Dust with powdered sugar and 2 teaspoons cocoa powder, if you like.
