Bone-in chicken breast halves are often enormous; for more modest portions, cut each breast in half crosswise before cooking. You can also substitute meaty chicken pieces such as skinned drumsticks or thighs; cooking time remains the same.

Ingredients

  • 6 bone-in chicken breast halves (5 to 5 1/2 pounds), skinned
  • 1 tablespoon chili powder
  • 1/8 teaspoon salt
  • 1/2 cup reduced-sodium chicken broth
  • 2 tablespoons lemon juice
  • 1/3 cup sliced pickled jalapeno peppers, drained
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1 8 - ounce package reduced-fat cream cheese (Neufchatel), cut into cubes and softened
  • 2 slices bacon or turkey bacon, crisp-cooked, drained, and crumbled (optional)
  • Sliced green onions (optional)

Directions

  1. Sprinkle chicken with chili powder and salt. Arrange chicken, bone side down, in a 5- to 6-quart slow cooker. Pour broth and lemon juice around chicken. Top with sliced jalapeno peppers.
  2. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours.Transfer chicken and jalapeno peppers to a serving platter, reserving cooking liquid. Cover chicken and keep warm.
  3. For sauce: Transfer 1 1/2 cups reserved cooking liquid to a small saucepan (discard remaining cooking liquid). In a small bowl, combine cornstarch and the water; stir into cooking liquid. Cook and stir over medium-high heat until slightly thickened and bubbly; cook and stir 2 minutes more. Gradually add cream cheese, whisking until melted and smooth. Serve chicken with sauce. If desired, sprinkle with bacon and green onions.
