Dress up grilled asparagus with this crispy crumb mixture, sort of a savory streusel made with panko, walnuts, lemon zest and mint. The combo is especially good alongside pork or chicken.

Ingredients

  • 1/2 cup finely chopped toasted walnuts
  • 1/3 cup panko breadcrumbs
  • 1/3 cup finely chopped fresh mint
  • 3 tablespoons olive oil, divided
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • black pepper
  • 1 pound asparagus, trimmed

Directions

  1. In a medium bowl, combine walnuts, breadcrumbs, mint, 2 tablespoons of the oil, lemon zest, lemon juice, salt and pepper; set aside.
  2. Heat a grill pan over medium heat (or prepare a gas or charcoal grill for direct cooking over medium heat). Toss asparagus in the remaining tablespoon of oil. Grill until gently charred, turning occasionally, 5 to 7 minutes. Transfer to platter; top with crumb mixture.
