Lemon Couscous
Ingredients
- 2 cups water or vegetable broth
- 1 teaspoon finely shredded lemon peel
- 2 tablespoons lemon juice
- 2 tablespoons olive oil or butter
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 10 ounce package couscous
Directions
In a medium saucepan, bring water, lemon peel and juice, oil, garlic, salt, and black pepper. Bring to boiling; stir in couscous. Remove from heat; let stand for 5 minutes, or until liquid is absorbed. With a fork, lightly fluff couscous. Serve with Cracked-Pepper Steak with Yogurt-Lime Sauce. Makes 4 servings.
