Serve this 15-minute side dish with grilled steak, chicken, or fish.


  • 2 cups water or vegetable broth
  • 1 teaspoon finely shredded lemon peel
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil or butter
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 10 - ounce package couscous


  1. In a medium saucepan, bring water, lemon peel and juice, oil, garlic, salt, and black pepper. Bring to boiling; stir in couscous. Remove from heat; let stand for 5 minutes, or until liquid is absorbed. With a fork, lightly fluff couscous. Serve with Cracked-Pepper Steak with Yogurt-Lime Sauce. Makes 4 servings.
