Cook this easy apple dessert on your grill in summer or on your stove in cooler weather--it's great either way. For outdoor entertaining, scoop ice cream into plastic cups.

  • 2 medium red cooking apples, cored and sliced
  • 1 teaspoon grated fresh gingerroot or 1/4 teaspoon ground ginger
  • 2 tablespoons butter or margarine
  • 3 tablespoons packed brown sugar
  • 1/3 cup apple juice
  • 1/2 teaspoon cornstarch
  • 2 cups vanilla or cinnamon ice cream

  1. Place a large skillet on grill side burner. In the skillet, cook apples and ginger in butter over medium heat about 3 minutes or until apples are just tender. Stir in brown sugar. In a small bowl, combine apple juice and cornstarch; add to skillet. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Cool slightly.
  2. Scoop ice cream into dessert dishes. Spoon apple mixture over ice cream. Makes 4 servings.
