Easy Balsamic Chicken

Colleen Weeden of the Midwest Living Test Kitchen knows her way around the kitchen. She puts together this simple chicken, then turns it over to husband Kent to cook on the grill. Colleen suggests using an instant-read thermometer to check if the chicken is done. Kent says its perfect every time if you use the thermometer, says Colleen.
skinless, boneless chicken breast halves (about 1 pound total)
cloves garlic, minced
crushed red pepper
- Place each chicken breast between two pieces of plastic wrap. Pound each lightly with the flat side of a meat mallet to make an even thickness (about 1/2 inch). Remove plastic wrap.
- Place the chicken in a shallow dish. In a small bowl or small glass measure, combine remaining ingredients and pour over chicken. Cover and marinate 1 to 4 hours.
- Place chicken on the rack of an uncovered grill directly over medium coals. Grill, uncovered, for 10 to 12 minutes or until an instant-read thermometer registers 170 degrees , turning once and brushing with marinade halfway through grilling time. Discard any remaining marinade.
