No offense to the classic mimosa, but not everyone wants to booze with their brunch. Enter the Darling Clementine, a tart, fizzy, deliciously pink, nonalcoholic alternative to classic morning cocktails.


  • 2 cups cranberry juice, chilled
  • 1 cup clementine juice (from about 8 clementines)
  • 3/4 cup lime juice
  • 3 tablespoons honey or simple syrup
  • 2 cups club soda, chilled
  • Sliced clementine, whole cranberries and/or superfine sugar (optional garnishes)


  1. In a pitcher combine cranberry juice, clementine juice, lime juice and honey, stirring until honey is dissolved. Cover and chill for up to 24 hours. Just before serving add ice cubes and club soda. If desired, rim glass with superfine sugar or garnish drink with a slice of clementine or whole cranberries.
