Cinnamon and curry powder balance Granny Smith apples in this cauliflower mixture.

Ingredients

  • 4 cups bite-size cauliflower florets (1 small head)
  • 2 Granny Smith apples, cored and cut into 1-inch cubes
  • 1/2 cup rinsed and drained canned chickpeas (garbanzo beans)
  • 3 cloves garlic, slivered
  • 3 tablespoons olive oil
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cinnamon
  • Snipped fresh cilantro (optional)

Directions

  1. In a 15x10x1-inch baking pan, toss together cauliflower, apples, chickpeas, garlic, olive oil, curry powder and cinnamon. Roast in a 425 degrees F oven for 20 to 25 minutes or until cauliflower is tender, stirring halfway through. If desired, sprinkle with cilantro before serving.
