Curried Cauliflower, Apples and Chickpeas

bite-size cauliflower florets (1 small head)
Granny Smith apples, cored and cut into 1-inch cubes
rinsed and drained canned chickpeas (garbanzo beans)
cloves garlic, slivered
Snipped fresh cilantro (optional)
- In a 15x10x1-inch baking pan, toss together cauliflower, apples, chickpeas, garlic, olive oil, curry powder and cinnamon. Roast in a 425 degrees F oven for 20 to 25 minutes or until cauliflower is tender, stirring halfway through. If desired, sprinkle with cilantro before serving.
