Riesling-poached fruit and billowy whipped cream crown a dense spice cake inspired by ingredients from the first Thanksgiving.

Ingredients

  • Butter
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups canned pumpkin
  • 3 tablespoons orange juice
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon vanilla
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 3 eggs
  • 1/3 cup chopped toasted pecans
  • Sweetened Whipped cream (optional)
  • Dried Fruit Compote
  • 2 cups Riesling wine
  • 2 cups water
  • 1/3 cup granulated sugar
  • 1 4 - inch 100-percent-cotton cheesecloth and 100% cotton kitchen string
  • 1 cinnamon stick
  • 1 star anise
  • 2 whole cloves
  • 8 mission figs, quartered lengthwise
  • 10 dried apricots, cut into strips
  • 3/4 cup dried tart cherries

Directions

  1. Preheat oven to 350 degrees F. Butter a 9x2-inch round cake pan and line bottom with parchment paper. Butter and flour the parchment and sides of the pan; set aside.
  2. In a medium bowl combine 1 1/2 cups flour, cornmeal, cocoa powder, baking powder, cinnamon, baking soda, salt, and nutmeg. Stir until well-combined and set aside. In a small bowl combine pumpkin, orange juice, ginger and vanilla.
  3. In a large bowl, with an electric mixer beat 3/4 cup butter for 30 seconds or until light and fluffy. Beat in brown sugar and granulated sugar until well-blended. Beat in eggs, one at a time, until light and fluffy, scraping bowl occasionally.
  4. In thirds, starting with the pumpkin mixture, alternately add pumpkin mixture and the flour mixture to the beaten mixture, stirring after each addition until just blended. (Mixture will look curdled.) Fold in pecans.
  5. Spread evenly in prepared pan. Bake for 55 to 60 minutes or until a toothpick inserted into center comes out clean. Cool 15 minutes. Turn out onto a cooling rack and remove parchment paper. Turn cake right side up on a serving plate.
  6. Dried Fruit Compote In a medium saucepan combine Riesling, water and sugar. Using the cheesecloth and kitchen string, tie the cinnamon stick, anise, and cloves into a bag. Add spice bag to saucepan. Cook and stir over medium-high heat until mixture comes to boiling. Add figs and cook for 2 minutes. Add apricots and cook for 2 minutes more. Add cherries and cook for 1 more minute.
  7. Dried Fruit Compote Using a slotted spoon transfer fruit to a bowl. Continue cooking liquid about 12 minutes or until reduced to about 1 cup. Remove spice bag and discard. Pour liquid over fruit. Allow to come to room temperature. Cover and refrigerate. Compote can be chilled, covered, up to 4 days. Bring to room temperature before serving or warm slightly, if desired.
  8. Dried Fruit Compote Slice cake and serve with compote and sweetened whipped cream, if desired.

Sweetened Whipped Cream

Ingredients

  • 1 cup whipping cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Directions

  1. In a chilled small mixing bowl combine whipping cream, sugar, and vanilla. Beat with the chilled beaters of an electric mixer on medium to high speed just until stiff peaks form (tips stand straight). Do not overbeat.
