Ingredients
- 1/2 cup butter
- 1-1/3 cups sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 cup mashed bananas (about 3 medium)
- 1/2 cup dairy sour cream
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 3/4 cup chocolate-covered toffee pieces or almond brickle pieces
- 3/4 cup toasted chopped almonds (optional)
- 1 recipe Brandied Brown Butter Frosting (see recipe below)
Directions
1. Grease a 15x10x1-inch baking pan; set aside.
2. In a large mixing bowl, beat the butter with an electric mixer on medium to high speed about 30 seconds. Beat in the sugar, baking powder, baking sode, and salt until combined. Beat in the egg, mashed bananas, sour cream, and vanilla. Beat or stir in the flour. Stir in the toffee pieces and almonds, if you like.
3. Pour the batter into the prepared baking pan, spreading evenly. Bake in a 350 degree F oven about 25 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on wire rack.
4. Prepare the Brandied Brown Butter Frosting and spread over cooled banana bars. Makes 48 bars.
Brandied Brown Butter Frosting: In a small saucepan heat 1/3 cup butter over low heat until melted. Continue heating until the butter turns a light brown. Remove from heat; pour into a medium bowl. Add 2 1/2 cups sifted powdered sugar, 1 tablespoon brandy or milk and 1 teaspoon vanilla. Beat with an electric mixer on low speed till combined. Beat on high to medium speed, adding enough milk to make frosting of spreading consistency. Use immediately.
