Chipotle peppers lend smoky heat to this great all-purpose barbecue sauce. (We especially love it with pork ribs.)

Ingredients

  • 1 small onion, finely chopped (1/2 cup)
  • 3 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 cup ketchup
  • 1/2 cup maple syrup or mild-flavor molasses
  • 1/3 cup cider vinegar or lime juice
  • 2 chipotle peppers in adobo sauce, finely chopped, plus 1 tablespoon adobo sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon-style mustard
  • 1/2 teaspoon salt

Directions

  1. In a medium saucepan cook onion and garlic in hot oil over medium heat about 5 minutes or until onion is tender. Stir ketchup, maple syrup, vinegar, peppers and adobo sauce, Worcestershire, mustard, and salt into onion mixture. Bring to boiling; reduce heat. Simmer, uncovered, for 25 to 35 minutes or until slightly thickened and syrupy, stirring occasionally.*

Note

  • Use sauce immediately or cool to room temperature, transfer to a covered storage container, and refrigerate for up to 2 weeks.
