Loosely Mexican-inspired, this flavorful upgrade to the usual yogurt-fruit parfait is a cinch to make -- either for a group, or just a single portion for yourself on a weekday.

  • 1 medium ripe cantaloupe, halved, seeded and cut into thin wedges
  • 3/4 cup plain Greek yogurt, stirred
  • 3 tablespoons honey
  • 1 1/2 teaspoons finely shredded lime zest
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon sea salt flakes or coarse salt
  • 3 tablespoons coarsely chopped roasted, salted pistachios

  1. Arrange a couple thin wedges of cantaloupe on a plate next to a dollop of well-stirred plain Greek yogurt. Drizzle yogurt with honey, then sprinkle with coarsely chopped pistachios, a few scrapings of lime zest and a pinch each of chili powder and flaky sea salt.
