This nifty mayo-dressed salad uses healthy and budget-friendly chickpeas instead of the traditional tuna, hard-cooked eggs or chicken. Try it in a sandwich or wrap or over a bed of greens.

Ingredients

  • 1 15 - 16 - ounce can garbanzo beans (chickpeas), rinsed and drained
  • 1 stalk celery, chopped
  • 1/3 cup chopped radishes
  • 1 green onion, sliced
  • 1/4 cup mayonnaise
  • 1 1/2 teaspoons yellow mustard
  • 1/2 teaspoon dried dill weed

Directions

  1. In a medium bowl, coarsely mash chickpeas with a fork. Stir in remaining ingredients. Chill to store. Use to fill buns or wraps.
