Dazzling Citrus Chicken
Ingredients
- 1 grapefruit
- 1 orange
- Orange and/or grapefruit juice
- 4 medium skinless, boneless chicken breast halves (1-1/4 to 1-1/2 pounds total)
- Salt and ground black pepper
- 2 tablespoons cooking oil
- 2 tablespoons packed brown sugar
- 4 teaspoons cornstarch
- 2 tablespoons orange liqueur or orange juice
- Drained maraschino cherries (optional)
- Torn mixed greens
Directions
1. Peel and section grapefruit and orange, reserving juices. Add enough additional orange and/or grapefruit juice to combined reserved juices to equal 1 cup citrus juice. Set juice and sections aside.
2. Sprinkle chicken with salt and pepper. In a large skillet, cook chicken in hot oil over medium-high heat about 12 minutes or until tender and no longer pink (170 degrees F), turning once. Transfer to a serving platter; keep warm.
3. Meanwhile, in a medium saucepan, combine brown sugar and cornstarch. Stir in the reserved citrus juice and the orange liqueur. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Add fruit sections; heat through. If you like, stir in cherries.
4. Spoon fruit sauce over chicken. Serve with greens. Makes 4 servings.
