PIck up a rotisserie chicken and a few veggies on the way home from work, and in 20 minutes, you can serve this colorful, crowdpleasing salad for dinner.


  • 6 cups torn romaine lettuce
  • 2 cups purchased deli-roasted chicken, chopped
  • 1 cup chopped tomato
  • 1 thinly sliced red or green sweet pepper
  • 1 avocado, halved, seeded, peeled and sliced
  • 1/2 cup shredded Mexican-style four cheese blend
  • 1 cup crushed tortilla chips
  • 1/2 cup drained sliced pitted ripe olives
  • 1/2 cup bottled chipotle ranch salad dressing


  1. On four dinner plates, layer lettuce, chicken, tomato, sweet pepper, avocado, shredded cheese, olives and tortilla chips. Drizzle with chipotle ranch dressing.
