bite-size square rice cereal or 3 plain rice cakes, broken into bite-size pieces

bite-size square wheat cereal or round toasted oat cereal

salted roasted soy nuts or corn nuts

small fat-free pretzel knots, circles or bite-size pretzel snaps

fish-shape cheddar cheese crackers

olive oil or canola oil

dried Italian seasoning, crushed

grated Parmesan cheese

finely snipped dried tomatoes (not oil-packed)

reduced-sodium Worcestershire sauce

Directions
- In a large roasting pan, combine the cereals, soy nuts, pretzels and crackers; set aside.
- In a small bowl, combine oil, Italian seasoning, Parmesan cheese, tomato, Worcestershire sauce and pepper. Pour oil mixture over cereal mixture in pan; toss until well coated.
- Bake, uncovered, in a 300 degree F oven for 30 minutes, stirring twice during baking. Spread snack mix on a large sheet of foil to cool. Store in an airtight container for up to 2 weeks. Makes 24 (1/2-cup) servings.
