Directions
- In a medium saucepan combine raisins, dried cherries and apple cider; bring to boiling. Reduce heat and boil gently, uncovered, for 30 to 35 minutes or until liquid is almost absorbed. Remove from heat and cool about 20 minutes.
- Meanwhile, grease and lightly flour a 10-inch fluted tube pan; set aside.
- In a large mixing bowl combine eggs, applesauce, oil and vanilla. In a medium bowl combine flours, baking powder, baking soda, cinnamon, salt, nutmeg and cloves; stir into applesauce mixture just until combined. Add raisin mixture and nuts. Transfer to prepared pan.
- Bake in a 350 degrees F. oven for 50 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack 15 minutes; remove and cool completely. Wrap and store overnight before serving. Sprinkle with powdered sugar before slicing. Makes 10 servings.
