Ingredients

  • 1 cup raisins
  • 1 cup dried cherries
  • 3 cups apple cider or apple juice
  • 2 eggs, lightly beaten
  • 1 cup unsweetened* applesauce
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 3/4 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup walnuts, chopped
  • Powdered sugar

Directions

1. In a medium saucepan combine raisins, dried cherries and apple cider; bring to boiling. Reduce heat and boil gently, uncovered, for 30 to 35 minutes or until liquid is almost absorbed. Remove from heat and cool about 20 minutes.

2. Meanwhile, grease and lightly flour a 10-inch fluted tube pan; set aside.

3. In a large mixing bowl combine eggs, applesauce, oil and vanilla. In a medium bowl combine flours, baking powder, baking soda, cinnamon, salt, nutmeg and cloves; stir into applesauce mixture just until combined. Add raisin mixture and nuts. Transfer to prepared pan.

4. Bake in a 350 degrees F. oven for 50 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack 15 minutes; remove and cool completely. Wrap and store overnight before serving. Sprinkle with powdered sugar before slicing. Makes 10 servings.
