Apple Cake with Lemon Sauce
Bake: 1 hr at 350°F

Ingredients
- 2 cups sugar
- 1 cup butter, softened
- 4 eggs
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 4 cups diced, peeled apples
- 1 cup packed brown sugar
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 recipe Lemon Sauce (see recipe below)
Directions
1. Grease a 13x9x2-inch baking pan. Set aside.
2. In a large bowl, beat sugar, butter, eggs, and vanilla with an electric mixer on medium speed until well mixed. Add flour, baking powder, and salt. Beat until just combined.
3. Spread half of the batter into prepared pan.
4. In another bowl, stir together the apples, brown sugar, cinnamon, and nutmeg. Spread mixture over cake batter in pan. Dollop remaining batter over the apples.
5. Bake in a 350 degree F oven about 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan for 30 minutes.
6. Serve warm squares of cake topped with warm Lemon Sauce. Makes 12 servings.

- 3 tablespoons cornstarch
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 1/2 cups water
- 6 tablespoons butter or margarine
- 1 teaspoon grated lemon peel
- 1/4 cup lemon juice
Directions
In a medium saucepan, combine sugar, cornstarch, nutmeg, and salt. Stir in water. Cook and stir until mixture is thickened and bubbly. Cook and stir for 2 minutes more. Stir in butter or margarine, lemon peel, and lemon juice. Makes 3-1/2 cups sauce.
