Salty bacon and Cajun seasoning liven up this veggie mixture for a hearty side.

  • 3 sliced thick-sliced bacon, cut crosswise into 1/2-inch pieces
  • 2 1/2 cups fresh or frozen whole kernel corn, thawed if frozen
  • 1/2 cup frozen edamame, thawed
  • 1/2 cup coarsely chopped onion
  • 1/2 cup coarsely chopped red sweet pepper
  • 1 teaspoon Cajun seasoning

  1. Place bacon pieces in 15x10x1-inch baking pan and bake in 425 degrees F oven for 8 to 10 minutes or until crisp. Using a slotted spoon remove bacon and drain on paper towels. Stir corn, edamame, onion, red sweet pepper and Cajun seasoning into drippings in pan. Roast for 15 to 20 minutes or until vegetables are tender, stirring halfway through. Stir in bacon pieces to serve.
