These easy appetizers combine two party favorites -- jalapeno poppers and buffalo chicken wings.

  • 3 ounces cream cheese, softened
  • 3 -4 tablespoons bottled cayenne pepper sauce (Frank's Red Hot®)
  • 1 cup finely chopped cooked chicken
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely chopped celery
  • 1/3 cup crumbled blue cheese or shredded cheddar cheese
  • 16 miniature sweet peppers, slit down the side, seeded and deveined (about 10 ounces)

  1. In a small bowl combine cream cheese and pepper sauce. Stir in chicken, carrot, celery, and cheese. Fill each sweet pepper with a rounded tablespoon of the filling. Place on a foil-lined baking sheet. Bake in a 425 degrees F oven for 12 to 15 minutes or until heated through.

These were REALLY good, but I would definitely not categorize them as an "easy" party recipe. There is a lot of prep that goes into these with cooking the chicken, chopping all the ingredients, softening the cream cheese, and cleaning out the little peppers. I added onions, and was surprised they were not on the ingredient list. They go perfectly with the other flavors and brings out the cream cheese. They are really good and were a party hit but not quick!
