Festive French Toast

Ingredients

  • 1 3 ounce package cream cheese, softened at room temperature
  • 1 tablespoon butter, softened
  • 1/3 cup sifted powdered sugar
  • 1/3 cup or 1 tablespoon frozen orange juice concentrate, thawed
  • 8 slices white bread
  • 1/4 cup orange marmalade
  • 1 egg
  • 1/4 cup milk
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter, margarine, or cooking oil
  • Sifted powdered sugar
  • Fresh strawberries (optional)
  • Orange peel curls (optional)
  • Kale or greens (optional)

Directions

1. Measure 1/4 cup of the cream cheese; set aside. For orange butter: In a small mixing bowl, beat remaining cream cheese and butter with a rotary or electric mixer until well combined. Beat in powdered sugar; gradually add orange concentrate (use the larger amount to make a drizzle), beating until smooth. Cover; chill until serving time.

To assemble:

2. Spread the reserved cream cheese on one side of each of 4 slices of the bread. Spread orange marmalade on the other 4 slices. Press together spread sides of the slices to make 4 sandwiches (At this point, you can wrap the sandwiches and chill them overnight.)

3. In a shallow dish, beat egg until frothy. Beat in milk, vanilla, and cinnamon. Dip sandwiches into mixture.

4. On a heated griddle or in a large skillet, cook sandwiches in hot butter over medium heat for 2 to 3 minutes on each side or until golden brown. Add more butter, if needed.

5. To serve, cut each sandwich in half. Sprinkle with powdered sugar and serve with orange butter. Garnish with strawberries, orange peel curls and kale, if you like.
