Nutrient-filled mushrooms replace some of the beef in this family-friendly taco filling, but they're finely chopped, so you won't even notice they're there! Use the meat for tacos, or on nachos or baked potatoes. (And feel free to trade the ground beef for pork or turkey.)


  • 2 tablespoons olive oil
  • 8 ounces button mushrooms, finely chopped
  • Pinch salt
  • 8 ounces ground beef
  • 3/4 cup water
  • 2 tablespoons taco seasoning mix


  1. In a large skillet, heat oil over medium. Add mushrooms and salt. Cook until tender and most of the liquid has evaporated, 8 to 10 minutes. Add ground beef and cook until no longer pink. Add water and taco seasoning mix. Simmer 5 minutes or until thickened.
