Ingredients

  • 3 15 - ounce can black-eyed peas
  • 1 pound cooked smoked Polish sausage, bratwurst, or kielbasa, sliced
  • 3/4 cup chopped onion
  • 3 cups hot cooked rice
  • Bottled hot pepper sauce

Directions

  1. In a large saucepan combine undrained peas, sausage and onion. Bring mixture to boiling. Reduce heat and simmer, covered, for 20 to 25 minutes or until onion is tender, stirring occasionally.
  2. To serve, spoon black-eyed peas over rice. Pass bottled hot pepper sauce.
