Tabbouleh
Ingredients
- 1/2 cup bulgur (steamed cracked wheat)
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 tablespoons water
- 1/4 teaspoon salt
- Dash pepper
- 2 cups finely snipped parsley
- 2 small tomatoes, finely chopped
- 1 cup chopped green onions
- 1/3 cup finely snipped fresh mint leaves
- Lettuce or cabbage leaves
Directions
1. Place the uncooked bulgar in a sieve; rinse with cold water and drain.
2. In a large bowl, combine bulgar, lemon juice, olive oil, water, salt, and pepper. Stir in parsley, chopped tomatoes, chopped green onions and mint. Cover and chill for 4 to 24 hours.
3. Serve mixture on lettuce or cabbage leaves. Makes 6 side-dish servings.
