Date-nut desserts can be cloyingly sweet, but orange juice brightens these simple bars.


  • 2 eggs, slightly beaten
  • 1/2 cup orange juice
  • 1/2 cup butter, melted
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 8 - ounce package pitted whole dates, snipped
  • 3/4 cup chopped walnuts
  • Orange Icing (optional)


  1. In a medium mixing bowl combine eggs, orange juice, and butter. Set aside.
  2. In a large bowl, combine flour, sugar, baking powder and salt. Stir in dates and walnuts. Toss lightly with a fork to coat dates and nuts with the flour mixture. Add egg mixture; mix well.
  3. Spread batter into a greased 8x8x2-inch baking pan. Bake in a 350 degrees oven about 30 minutes or until a toothpick inserted in center comes out clean. Cool in pan on a wire rack. If desired, drizzle bars with Orange Icing.

Orange Icing


  • 1/2 cup sifted powdered sugar
  • 1 - 2 teaspoons frozen orange juice concentrate, thawed, or orange juice


  1. In a small bowl stir together powdered sugar and orange juice concentrate, or orange juice. Stir until a drizzling consistency.
