  • 1/3 cup mayonnaise
  • 24 slices baguette-style French bread, cut 1/2 inch thick
  • 2 tablespoons soy sauce
  • 6 ounces thinly sliced ham
  • 2 cups sliced English cucumber
  • 1 cup bias-sliced carrot
  • 1/2 cup coarsely chopped fresh cilantro
  • Thinly sliced jalapeno chile peppers* (optional)


  1. Preheat broiler. Spread mayonnaise on one side of each bread slice; arrange slices, spread sides up, on a baking sheet. Broil 4 to 5 inches from the heat about 1 minute or until slices just start to toast. Remove baking sheet from oven; gently brush tops of slices with soy sauce. Broil 1 minute more.
  2. Top bread slices with ham, cucumber, carrots, and cilantro. If desired, top with jalapeno slices and drizzle with Lime-Soy Sauce.


  • *Tip Chile peppers contain oils that can irritate your skin and eyes. Wear plastic or rubber gloves when working with them.
