Fresh apple, dried fruit and cashews add color, sweetness and crunch to a ready-in-45 vegetarian chili. For a twist on the traditional toppers (and to hint whats inside), garnish with apple slivers.


  • 1 16 - ounce jar thick and chunky salsa
  • 1 15 - 16 - ounce can yellow hominy, rinsed and drained
  • 1 15 - 16 - ounce can black beans, rinsed and drained
  • 1 14 1/2 - ounce can reduced-sodium chicken broth
  • 1 medium Granny Smith apple, cored and chopped
  • 2/3 cup dried cranberries, golden raisins or snipped dried apricots
  • 1 tablespoon unsweetened cocoa powder
  • 2 -3 teaspoons chili powder
  • Several dashes chipotle-flavor bottled hot pepper sauce
  • 2/3 cup coarsely chopped cashews
  • Granny Smith apple, finely slivered or chopped (optional)
  • Lime wedges (optional)


  1. In a 4- or 5-quart Dutch oven, combine salsa, hominy, beans, chicken broth, apple, cranberries, cocoa powder, chili powder and bottled hot pepper sauce. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes.
  2. Just before serving, stir in cashews. If you like, garnish each serving with slivered or chopped apple and/or a lime wedge.

This was good and came together fast, but the apples were completely overpowered by the strong chili and chipotle flavors. If you're looking for creative ways of incorporating apples into savory dishes, this is not the strongest example.
