Ingredients

  • 1 8 ounce can pineapple tidbits, drained
  • 1 medium ripe mango, seeded, peeled, and chopped
  • 1/2 of a sweet red pepper, finely chopped
  • 1/4 of a medium red onion, finely chopped
  • 2 - 3 tablespoons snipped fresh cilantro
  • 1 tablespoon freshly squeezed lime juice
  • 1/2 medium jalapeno pepper, finely chopped (do not remove the seeds*)

Directions

In a storage container, combine all ingredients. Cover and refrigerate for 2 to 24 hours. Makes 4 to 6 servings.

  • Tip: Suggested Uses:  Serve with grilled chicken, fish or pork.
  • Note: *  Hot chili peppers contain volatile oils that can burn your eyes, lips, and sensitive skin. Wear plastic gloves while working with peppers, and be sure to wash your hands thoroughly afterward.
